I am looking for the maiden name and genealogy of Sarah Marshall, wife of John Marshall who are both mentioned in the 1841 census as living at Winterstoke:

I've had an initial look for you. Firstly, they appear to be living in the village of Worle which is a small part of the Hundred of Winterstoke. This seems to be confirmed by an entry in the 1851 census where the following entry appears:-

As you can see, the ages of the adults don't match up, but that's not uncommon! Apart from that, I think this refers to your family.
Sarah, Eliza, Joseph and Ellen are listed in the baptism records for St. Martin's Church, Worle.
I've tried to find records of the baptisms of either parent and their marriage, so far without success. The only Sarah I've found whose baptism is somewhere near the birth date which can be inferred from the 1841 census, 1806, is Sarah FRY baptised in Worle on 19 October 1806. There is no record of her being married in the church at Worle.
So, in general, I've not found much to help you, I'm afraid. I'll keep looking though and we can only hope that someone else has more luck than I have so far.

It would be interesting to know what month the census was taken. When the family arrived Geelong on 14th Sept 1851, some had had a birthday. The arrivals register reads:

I have checked the deaths in Victoria 1851 to 1900 for Sarah Marshall and none give a maiden name of Fry. I will check the registers for South Australia, New South Wales and Queensland.
According to Sarah’s age in the 1841 census, she would have been born in 1806. However based on the difference in ages given on the 1851 census and the arrivals in Victoria she was born between April and September 1812.
One way of finding the mother's maiden name would be to purchase a birth certificate for George MARSHALL who was just 2 months on the 1841 census (taken in June 1841)

I had the list of Sarah Marshalls who died in Victoria but couldn't work out which one it was. The death notice in the Darling Downs Gazette nails it down and would have been placed by Eliza, my 2g grandmother. I think she was known as Elie so many people thought her name was Ellen. Perhaps this explains why her sister Ellen became Helene.
My 2nd cousin asked me to research this as he is doing his X genome history - following his maternal genetic history. Coincidentally his mother's maiden name is Bennett.
Can we go back any further?

Hi Joy, Im Jazz of Melbourne Australia. Im looking forward to visiting Bristol in April in search of my husbands BURGE family of Yatton. I just noticed your post and thought Id ask if you have photos of the graves at Melb Gen Cem of your family. I live about 1/2 an hour from it and would be happy to take photos for you. Also do you know of the Victorian BDM certs and how they work. For a small search fee and 20 AU$ per cert you can have the full cert emailed. This usually gives all the info that we don't quite get from the transcriptions. IE cause of death and maiden names etc. Also I have a copy of the cemetery map if you would like one for your files. MGC is a massive cemetery. Just to confirm, it is the Sarah Marshall that died in 1865 that you are looking for the maiden for? Ive just tried to get the cert (couldn't help my self) but the system is down. Sometimes the certs give an address too, so who knows you may even find a house they once lived in. Also, I grew up knowing a John Marshall (one of dads friends) I wonder if he is related to your family, after all, it is a small world!
